Soya beans, also known as soy beans, are one of the world's richest sources of plant-based protein. They're also a complete protein, making them a dietary mainstay of many people opting for vegan lifestyles. Soya beans are rich in healthy polyunsaturated and monounsaturated fatty acids, and they're a great source of fibre. 

Our organic soya beans have a mild, slightly nutty flavour and a firm texture that helps the beans to retain their shape when they're cooked. Soya beans should be soaked before cooking – preferably overnight – and then boiled (using a pressure cooker greatly reduces the cooking time). Once the beans are cooked, you can use them in soups, salads, casseroles and sauces in the same way you'd use other dried beans. They absorb the flavours of the other ingredients with which they're cooked, so you can treat them like a blank canvas for your culinary creativity.

For a crunchy snack that's packed with protein, roast your overnight-soaked soya beans in an oven tray with a little oil and some seasoning (start with sea salt and branch out into chillicayenne pepper, cumin, garlic, smoked paprika, rosemary, thyme and curry powder) for a crunchy bite that goes down a treat with a glass of wine, beer or other beverages.

If you're feeling experimental, try your hand at making your own 100% organic, additive-free soya milk and other soya drinks. It's much easier than it sounds (all you need is a blender and something to strain the blended beans through, and a little imagination when it comes to additional ingredients and flavours (we like a little organic cane sugar and cinnamon). And why stop there? How about soy milk ice-cream? Both simple non-dairy and fully vegan ice-creams are a great way of flexing your culinary prowess!
