Hatton Hill Organic's organic ground cinnamon (cassia) is made from the bark of the Cinnamomum aromaticum tree, which is harvested and stripped of its outer layer. 

Our organic ground cinnamon is hugely versatile, not only in the sweet dishes that spring to mind when most people think of its uses, but also in a wide range of savoury preparations where a sweet-spicy kick is exactly what’s required. It immediately adds an aromatic and flavoursome note to baked goods such as muffins, cakes, biscuits and breads – not to mention doughnuts and pancakes. And it pairs like no other spice with cooked apples in pies, tarts and more – and also with other fruits (try baked grapefruit topped with a sugar and cinnamon mix, or sprinkle it on fruit salads).

Some savoury dishes to which our cinnamon gives a mouth-watering aromatic twist include Moroccan-style tagines, chicken shawarmas, grain dishes such as pilafs and roasted vegetables (especially vegetables with a slightly sweet note, such as pumpkin and squash). The difference between Cassia and Ceylon cinnamon is that cassia tends to be a dark brown-red colour with darker sticks and a rougher texture than Ceylon cinnamon. Carefully dried and harvested from the most fertile regions of Vietnam, our organic ground cassia cinnamon is one of the aromatics that will open a new era for your taste buds. You can use this miraculous thing in hundreds of desserts and recipes, even in the water you drink daily.

Ground cassia cinnamon is mostly used during the preparation of recipes because they cannot be eaten due to their hard structure and dominant taste. This type of cinnamon is usually removed after being kept in foods and beverages for a certain period of time to give flavour. There is no harm in reusing the same cinnamon stick according to the recipe to which it is added.
