Lentils are the oldest known pulses cultivated by humans, their domestication dating back at least 11,000 years. Originating in central and western Asia, they have been a staple in regional cuisine whose popularity has spread globally – especially on the Indian subcontinent – thanks to their versatility, nutritional value and distinctive taste. Brown lentils have a higher fibre content than green lentils, and they hold their shape better than red or yellow lentils if cooked carefully. But you can alter their texture to suit whatever dish you’re cooking them in – or simply your personal preferences – through longer cooking, mashing or puréeing.

USES: Our organic brown lentils can be used in an enormous variety of dishes, from soups, stews, and side dishes to salads, spreads, and so much more. Brown lentils take less time to cook than their green counterparts, yet they retain their form almost as well, so a soft texture can be achieved easily without the lentils becoming mushy – unless, of course, that’s what you want, in which case you can mash or purée them. Beyond the regular, reliable range of curries, casseroles, soups and salads, creations such as brown lentil burgers, falafel or fritters, brown lentil sides (if you’re feeling inspired, you can marinate your lentils before cooking), lentil croquettes and hummus-like brown lentil dips offer an exciting sample of the practically endless culinary possibilities that lentils offer – so experiment to your heart’s content!
