The S17 Teja variety of chilli is the finest grade of Guntur chilli in India, originating in the Guntur, Prakasam, Warangal and Khammam districts of the state of Andhra Pradesh. It’s also one of the hottest chillies grown in India, with a Scoville heat scale rating of 75,000-100,000 units. Compare that with the mild jalapeño chillies you may be used to eating in Mexican restaurants, which typically score 2,500-8,000 units on the scale, and you’ll get an idea of the Teja’s heat. It’s not off the chart, however, and although it’s spiciness may not be for everyone, this chilli is enormously popular in its native country, where it’s used to make curry pastes, pickles and sauces. It’s aromatic and delicious, and lends itself easily to a wide range of dishes.
