In the UK, rhubarb first gained popularity as a pie filling (often with apples) and an ingredient in other desserts beginning in the 18th century, after sugar came into widespread use. Sugar played a key role in waking people up to the culinary possibilities of this lovely vegetable, whose fruity flavour is extremely tart, but here at Hatton Hill, we realise that people don't always want so much sugar these days, so we sweeten our rhubarb a little with natural apple juice.
PURE, PREMIUM PRODUCT: Hatton Hill's dried rhubarb is grown in temperate Poland, where it is carefully harvested, infused with apple juice to moderate its tartness, dried and packed to maximise the retention of its wonderful flavour.
USES: Rhubarb is a star ingredient that's more versatile than you might think. It brings new zing to baked and flour-based goods such as muffins, pancakes, cookies and cakes. It's also excellent when rehydrated, cooked with some sugar or honey, and added to cereals such as oatmeal. The longer dried rhubarb cooks or stews in liquid, the less chewy it becomes, so give it time when using it to make sauces for meat, poultry and vegetable dishes. Rhubarb-based sauces are a classic and wonderfully indulgent pairing with pork and gamey meats such as lamb, duck and venison, and can be used to brilliant effect in vegetarian and vegan dishes with plant-based substitutes. And don't forget you can make terrific teas and other beverages from dried rhubarb. Try combining it with apples and other fruits to take the edge off its tartness while preserving its uniquely delicious flavour.
