Porcini mushrooms are popularly known as “the king of mushrooms” – and not for nothing, even though their name, which means “little pig” in Italian, is rather more humbling. Porcinis boast a flavour and aroma whose fullness is almost unequalled in the fungi realm. That flavour and aroma is intensified by drying, making dried porcinis a true star ingredient celebrated by chefs worldwide.
PURE, PREMIUM PRODUCT: Hatton Hill Organic’s dried porcinis are carefully grown in Russia and sliced before being naturally dried and packed to seal in their rich, earthy, umami-rich flavour.
USES: Dried porcinis should be soaked before use, and the water used to soak them kept for use as a hearty stock in the dish for which the mushrooms themselves are destined. Porcinis can be used in almost any dish that would normally require a more ordinary variety of mushrooms – think sauces, soups, stews, gravies and the like – but they really come into their own as the star ingredient upon which certain dishes are based, many of which are Italian or French. Try porcini risotto for an easy, classic example of how these mushrooms’ flavour and aroma bring an entirely new culinary experience to a simple rice dish. But don’t stop there. How about porcini ragout, porcini cream soup, porcini sauce for meat or poultry, porcini ravioli, porcini pot roast…? The list goes on! And did we mention that you can blitz them dry in a food processor to make a delicious powder for seasoning all kinds of dishes or for a rub before roasting meats and vegetables?
