Our organic curry leaves are, surprise, surprise, an excellent ingredient in curries – but there's so much more to them than just their namesake dish. Even in curries, curry leaves are not the mainstay flavour – instead, they underpin and augment the flavours of other spices and ingredients in the dish as an incredibly versatile addition that adds depth and complexity thanks to their lemon scent and distinctive, pungent taste, which has notes of anise and lemongrass. Think of curry leaves as the South and Southeast Asian equivalent of bay leaves, and you're on the right track.

Beyond their uses in curries, our organic curry leaves are a terrific ingredient in soups and sauces, marinades for chicken, fish, meat and vegetables, and in flour-based preparations such as flatbreads and batters. They're also a distinctively delicious addition to casseroles and, after a little rehydration, rice dishes and stir fries.

One popular use of curry leaves is making a fragrant, flavoursome oil named tadka with the addition of mustard seeds, cumin and ghee, or another oil that has a high smoke point. Tadka can be used as a base flavour ingredient in a wide range of dishes, or poured over dishes after cooking as a tasty finishing touch. 

Tea drinkers may want to try their hand at curry leaf tea – simply crush up our organic curry leaves and steep in boiled water for a refreshing cuppa with a difference!
