Cubeb pepper is also known as Java pepper, thanks to its Indonesian origins (it's frequently used as a spice in Indonesian cuisine) and tailed pepper, on account of the fact that its stem is part of the ingredient. It's related to the plant from which black pepper is derived. 

Cubeb pepper has a colourful history. It was widely traded between Java, the Middle East and Europe until 1640, when the king of Portugal banned imports of cubeb from Java to boost sales of black pepper from foreign territories it controlled, leading to a decline in its use outside its native region and the rise of black pepper in its place. Today, there's still a rarity about cubeb, as any hipster chef will tell you. 

Our organic cubeb pepper has a peppery, pungent flavour with distinctive notes of allspice and nutmeg that take over from its very slight bitterness when cooked, especially when cubeb is used in baking. 

Outside of its native Indonesia, one of cubeb pepper's most common uses is in a four-spice mix with cloves, nutmeg and ginger that's popular in French cuisine – a mix known as quatre épices. This blend of spices is widely used to give warmth, flavour and aroma to soups and stews, and it adds a fantastic flavour dimension to other vegetable and meat dishes.

Cubeb – in a spice mix or on its own – is also a wonderfully distinctive addition to baked goods such as spice biscuits and breads. And it's a terrific spice for making bouquet gin – just steep the peppers in the spirit for a fortnight, strain them out, and enjoy a drink with a delicious difference!
