Cassava flour is one of those flours that's an important cooking ingredient all over the world, but which many people in Western countries nevertheless remain unsure about how to use. It's made by grinding the root of the cassava plant, unlike tapioca flour, which is derived from starch extracted from the root of the plant, a native to northern Brazil that now grows worldwide, especially in other parts of South America, and in Asia and Africa.

The fact that cassava flour is made from the entire root makes it more nutritionally dense than tapioca flour. It's grain-free, gluten-free, and nut-free, and it's generally regarded as the gluten-free flour that's most similar to white wheat flour, unlike tapioca flour, which is more like corn starch in its texture and uses. Cassava flour is also paelo diet-friendly.

Cassava flour has no fat, almost no salt, packs plenty of healthy carbohydrates, contains more fibre than tapioca flour, and it's rich in vitamin C, containing about 70% of the recommended daily intake in one cup.

Cassava flour can be used in place of white wheat flour in a number of recipes and baked goods, but you might experiment a little when it comes to how much to use; cassava flour is somewhat lighter then traditional wheat flour, but more absorbent, so you may want to adjust the ratio of flour to liquid accordingly, and it also has an appealing, slightly nutty taste. Cassava flour's similarity to white wheat flour makes it an excellent choice for preparations such as cookies and brownies, banana bread, pancakes, waffles, muffins, tortillas and other flatbreads, cakes, and even pasta dough. It's also useful for thickening sauces, gravies and pie fillings.
