Sichuan Pepper, as its name suggests, has its origins in the southern Chinese province of Sichuan, a region justifiably famous for its food, which can be found all over the world. Contrary to what its name suggests, Sichuan pepper is not in fact a pepper – these cute “peppercorns” are the berries of the prickly ash tree, a member of the citrus family, carefully harvested by hand and dried in natural sunshine.

Our organic Sichuan pepper is wonderfully aromatic – earthy and quite unique, with a bright citrus flavour. Unlike pepper, it's not hot or spicy (it has less heat than black peppercorns), but it gives you an addictive tingling sensation that in combination with other spices (typically red chillies in Sichuan cooking) makes for a truly unique dining experience.    

It's used extremely widely in Sichuan cuisine, in dishes such as dry-fried green beans, mapo tofu, hotpot and many, many more, but it's actually surprisingly at home in a range of non-traditional and non-Chinese preparations. Try grinding it up and mixing it with chilli, cumin and star anise to make a rub for roasted and barbequed meat, fish, chicken and vegetables that'll cement your reputation as a culinary legend. Grind it into mixes for burger patties (veg and non-veg both work brilliantly). Add it to stews – especially those with a little chilli heat – to give them a truly sensational lift. Sprinkle it over salads – particularly Asian-style preparations – and into soups. Or get out your wok and get old-school Sichuan with any one of a huge number of traditional recipes. For a little berry, Sichuan peppers are big on versatility!
