Semolina is a type of flour that's made from durum wheat – a variety that's also known as pasta wheat and macaroni wheat. Semolina is quite a bit coarser than traditional flour, and it has a more earthy aroma than most wheat flours.
It's most commonly used to make pasta and cous cous – its high gluten content makes a relatively non-sticky dough that's highly elastic, which helps pasta hold its shape when cooking, and helps form the semolina balls that make up cous cous.
Making pasta at home is incredibly easy, addictively experimental, and will give you a fantastically fresh result every time that'll put dried supermarket pasta in the shade. With our organic semolina, a little water, some organic extra-virgin olive oil, optional eggs and a dash of sea salt, it takes just five minutes to prepare in a food processor, so what are you waiting for?
Our organic semolina is also a terrific replacement for standard wheat flour in a wide range of dishes and preparations – think breads, cakes, cookies and pizza, and indeed anything that uses conventional wheat flour, and in puddings and porridges. And it's an anchor ingredient in gnocchi, which is also unbeatable made at home instead of store-bought.
