The vanilla plant is a fruit-bearing orchid native to Mexico, which was the world's biggest producer of this delicious spice until 1819, when French entrepreneurs shipped vanilla pods to the islands of Réunion and Mauritius, where production took off to make the then-colony practically synonymous with the vanilla flavour the world has fallen in love with.
Many people may think vanilla needs no introduction (vanilla ice-cream, right?). Think again – its sweet, rich, warm woody, and even smoky flavour can vary considerably, boasting as much complexity as the bouquet and taste of a fine wine.
Our Madagascan vanilla has a classic, full flavour that imparts a sensual flavour and aroma to a wide range of desserts and other sweet treats. It's easy to use: just scrape out the vanilla beans from the pod and drop them into the dish your preparing. The seeds are tiny and black, and look rather like caviar, so there's no need to grind them. Make sure you keep the pod – more on that in a moment.
Our vanilla will wow you in all sorts of ways. Try using it in mixes for cakes, cupcakes and cookies, or in classic British bread pudding with a dash of rum. Add it to a milk and egg mix to make a very special style of French toast. Stir our vanilla into rice puddings and other delicate desserts. Use it to add unmistakable flair to fruit tarts (pears are a particularly good choice), crème brûlées and dishes that use custard. Or beat Big Food at its own game by crafting your own vanilla ice-cream – a fantastically fresh twist on a treat that's chronically underrated thanks to the proliferation of bland factory product in supermarket freezers everywhere.
Having used the seeds, you can also use the vanilla pod to really get the most out of its fantastic flavour. Steep the pod in vodka to make your own, no-nasties vanilla essence (it takes a couple of months, but it's worth the wait – and you can keep topping it up as you use it). Bury the pod in sugar to create a fragrant sweetener with a difference (this can also be topped up, as the pod will continue to impart flavour and aroma for some time). drop the pod into coffee to give your morning joe a real boost. Cook up a simple syrup with a little sugar and water. Pound for pound, our vanilla pods are one of the most concentrated sources of "Yum!" on the planet!
