Lentils are the oldest known pulses cultivated by humans, their domestication dating back at least 11,000 years. Originating in central and western Asia, they have been a staple in regional cuisine whose popularity has spread globally – especially on the Indian subcontinent – thanks to their versatility, high nutritional values and distinctive taste. French-type green lentils are smaller than other varieties of lentils and are renowned for holding their shape during the cooking process.

USES: Our organic French-type green lentils are at home in an enormous variety of dishes, from soups, stews, and side dishes to salads, spreads and many more. French-type green lentils take longer to cook than other lentil varieties, and they retain their form as well as they keep their flavour during cooking, so a soft texture is easy to achieve without mushiness – unless you choose to mash or purée them. Beyond reliable regulars such as curries, casseroles and soups, creations including green lentil burgers, fritters, marinated green lentil salads and sides, lentil croquettes and lemony green lentil dip with cilantro offer an exciting range of culinary possibilities – so experiment to your heart’s content!
