Dill is an aromatic herb that's native to the eastern Mediterranean and western Asia, belongs to the same family as parsley and celery, and has a history of use that stretches back at least 5,000 years to ancient Egypt, where it was employed medicinally. These days, the dill plant and its seeds are used widely in Northern European cuisine (its name comes from an old Norse word meaning "to soothe"), and their liquoricey flavour is also popular in countries such as Turkey and as far afield as Southeast Asia. Arguably the best-known use of dill and dill seeds is in pickling, where they give vegetables such as gherkins, carrots, cucumbers, green beans and cauliflower a taste that's distinctive, fresh and herby.

The dill plant and its seeds differ in terms of their uses – the leaves of the plant are more like a herb, while the seeds are more like a spice, stronger and more pungent. In addition to pickles, you can use them together – ground up or whole – in foods such as salad dressings, vinegars and sauces, or you can use the seeds on their own in preparations such as bread, soups, sauces and vegetable dishes – anything that could use a liquoricey lift. 

Try our organic dill seeds with fish, where their flavour and aroma work to provide a nice counterpoint to any salty, marine flavours. In South Asian cuisine, they're a wonderful addition to dals and fried with other spices as a tadka, a last-minute topping sprinkled over a range of dishes before they're served.
