Butter beans, also known as lima beans, originate in Central and South America, and were first domesticated around 2,000 BC, and it was some 3,500 years later that they began to be cultivated in Europe and elsewhere.
Hatton Hill Organic's organic butter beans are a great source of fibre and protein that are also a kitchen cupboard essential, thanks to the wide range of dishes in which they can be used.
Our organic butter beans are stupendous in stews and casseroles, pairing particularly well with herbs such as sage and rosemary, and with a variety of other ingredients, from bacon to broccoli and pretty much anything you care to name. Try butter bean and chorizo stew, southwestern French-style cassoulet, or one-pot chicken pieces with pancetta and butter beans.
They're also a standout ingredient in soups, adding volume, depth of flavour, texture and fibre. How about leek and butter bean soup with crispy kale and bacon? Or chicken and butter bean soup with rosemary, sage and thyme?
In salads butter beans are a boon, filling them out beautifully and providing a solid hit of protein. Some of our favourites are butter bean, cucumber and radish salad, warm butter bean salad with lemon and butter bean and chilli tomato salad.
Butter beans also make a superb side dish for fish, meat, poultry and vegetables. Try spiking them with a few sprigs of mint or other herbs, either mashing the herbs in with some butter or Hatton Hill Organic extra-virgin olive oil after cooking or serving them whole.
Pro tip: Cooking our organic butter beans from scratch will give them immeasurably more depth of flavour than using pre-cooked, canned beans, so it's worth putting in just that extra little bit of effort!
