Black eyed beans have a delicious nutty, earthy flavour and a texture that's soft yet firm. They don't require soaking, but soaking them overnight prior to cooking them will greatly reduce the cooking time required.
Cook them in a stock or broth to really give them a flavour boost, then add them to everything from salads to stir-fries to soups. They're a delicious and visually striking addition to grain bowls, and work wonderfully in a range of Caribbean- and Creole-style rice dishes. Black eyed beans are hugely popular in Mediterranean-style casseroles – often with ham, a classic combination – as an incredibly versatile ingredient to which almost anything else that takes your fancy can be added. They're a culinary canvas, so get creative!
Pro tip: Cooking our organic black eyed beans from scratch will give them immeasurably more depth of flavour than using pre-cooked, canned beans, so it's worth putting in just that extra little bit of effort!
