Today, they remain a major ingredient in Indian cuisine, and are popular in the cuisines of other nations when heat and pungency is required that milder varieties such as yellow or brown mustard seeds simply cannot provide.

USES: Practically a staple in Indian kitchens, black mustard seeds have a wide range of uses across the spectrum of foods internationally, such as lentil, potato and roasted vegetable dishes, and in sauces to accompany flavoursome meats like duck, lamb and steak. Black mustard seeds are best toasted or lightly fried in oil or ghee (clarified butter), which tempers the bitterness of the raw seeds and brings out their full flavour, then crushed before use. In mustard recipes, they should be typically soaked overnight to tease out the fullest expression of their complex taste and aroma.
