The cultivation of black mustard seeds originated in the Middle East, Turkey and the Indian subcontinent, and they have been used to flavour foods for at least 4,000 years. Today, they remain a major ingredient in Indian cuisine and are popular in the cuisines of other nations when heat and pungency are required that milder varieties such as yellow or brown mustard seeds simply cannot provide.

USES: A staple in Indian kitchens, black mustard seeds have a wide range of uses across the international spectrum of foods, such as lentil, potato and roasted vegetable dishes, and in sauces to accompany flavoursome meats like duck, lamb and steak. Black mustard seeds are best toasted or lightly fried in oil or ghee (clarified butter), which tempers the bitterness of the raw seeds and brings out their full flavour, then crushed before use. In mustard recipes, they should typically be soaked overnight to tease out the fullest expression of their complex taste and aroma.
