Kaffir lime trees are citrus fruit-bearing trees native to tropical Southeast Asia and southern China. Their leaves boast an intense citrus fragrance and flavour that many chefs say is impossible to substitute with any other ingredient. The leaves are a mainstay ingredient in the cuisines of Thailand, Cambodia Vietnam and Laos, and also used widely in Indonesian and Malaysian dishes.

USES: A useful way of thinking about how to cook with kaffir lime leaves is to treat them as a kind of Southeast Asian bouquet garni, or bay leaf, since they're used in much the same way – to impart a distinctive flavour and aroma to your cooking. They have an intense citrus flavour and a hint of spiciness. Their flavour is lighter and has more zing than that of bay leaves and curry leaves. In Southeast Asian cuisine, kaffir lime leaves are often paired with ginger and lemongrass, and they work superbly with chillies, galangal and shallots. Their most widespread use is in cooking curries, soups, stocks and stir-fries, and they're nothing short of wonderful with delicate flavours such as fish, chicken and coconut milk (they're an anchor ingredient in Thai tom yum soup).
