In Chinese, “chao tian” means “facing heaven”, which is an apt description of these spicy peppers for two reasons – first, these chillies grow pointing towards the sky, and second, they’re a heavenly ingredient for cooking, with a fragrance and heat that has made them a staple in China’s Sichuan Province, which is famous worldwide for its delicious, spicy cuisine. They’re medium-hot, with a Scoville heat scale rating of 10,000-50,000 units (by comparison, the mild jalapeño chillies served up in Mexican restaurants typically rate 2,500-8,000 units), and a versatile ingredient not just in Chinese-style dishes, but in anything that requires a light touch of freshness and piquancy. They’re perfect in stir-fries, stunning in sauces, and ideal for making your own chilli oil.
