Pequin chilli pods, also known as pequin peppers, are almost 10 times hotter than the mild jalapeño chillies typically served up in Mexican restaurants. They boast a complex, smoky, citrusy, nutty flavour, making them excellent for pickling, in salsas, soups and any dish in which you want some heat.
