Green cardamom, also known as true cardamom, is a member of the ginger family whose seeds have an exotic, earthy sweetness, rather like a cross between eucalyptus, mint and pepper. 

Cardamom has a history dating back at least 4,000 years. It was used by the ancient Egyptians, Greeks and Romans for a variety of purposes, including dental hygiene, fragrances, and medicine. Today, it's better known for lending its distinctive flavour and aroma to a range of cuisines, notably those of Southern Asia, the Middle East, North Africa and – surprise – Scandinavia.

Green cardamom pairs superbly with red meat, poultry, pulses such as chickpeas and lentils, oranges, rice and other warm spices such as cinnamon and nutmeg. It releases a subtle flavour when tossed in hot oil at the start of cooking, and it's often used to get an initial burst of flavour into curries, alongside other whole spices. 

Green cardamom pods are either quite finely crushed using a mortar and pestle to separate the seeds from the husk for rice dishes, breads and pastries, or added whole, and only slightly crushed, to preparations such as chai – an aromatic milky tea that's ubiquitous in India – and to soups, curries and sauces. Green cardamom is also a sensational surprise sprinkled onto desserts, smoothies and other sweet preparations, and it adds a unique flavour to hot drinks such as coffee, mulled wine and hot cider.
