Lentils are the oldest known pulses cultivated by humans, their domestication dating back at least 11,000 years. Originating in central and western Asia, they have been a staple in regional cuisine whose popularity has spread globally – especially on the Indian subcontinent – thanks to their versatility, nutritional value and distinctive taste.

Red lentils have the sweetest, nuttiest taste of all lentils, and require the shortest cooking time. They tend to become slightly mushy when cooked, which makes them perfect for soups and curries, and also for thickening casseroles and stews. Longer cooking will produce a softer, mushier texture, so if you want red lentils to hold their shape and firm bite for salads or side dishes, simply reduce the cooking time.
