Tapioca flour is a very versatile flour that many people nevertheless remain unsure about how to use. It's derived from the root of the cassava plant, unlike cassava flour, which is the whole root of the plant, a native to northern Brazil that now grows worldwide, especially in other parts of South America, and in Asia and Africa.
It’s a staple food in many parts of the world, thanks to the fact that it packs plenty of energy, like many carbohydrate-rich foods, such as potatoes, although it has double the fibre and potassium found in spuds.
Our organic tapioca flour is an excellent binding flour when used in combination with non-grain flours in gluten-free bread and cake recipes, giving them a light, airy and more chewy texture with a satisfying crispy crust texture. It's also a great, gluten-free way of thickening soups, sauces, gravies and pie fillings, thanks to the fact that it never discolours the other ingredients with which it's used, and it has no flavour or aroma of its own.
Tapioca flour is also a great kitchen essential when you're frying food, coating meat, fish and vegetables wonderfully to give them a crispy crust or outer layer that's a gluten-free alternative to bread crumbs and wheat flour.
