Buckwheat is believed to have been first cultivated more than 8,000 years ago in Southeast Asia. It was one of the first crops introduced to North America by early European settlers and it's a staple food in much of Eastern Europe.
Despite its name, buckwheat has nothing to do with wheat: it's a cereal, and naturally gluten-free. Our organic buckwheat flour, milled from this nutritious plant that's part of the rhubarb family, is an excellent gluten-free alternative to regular wheat flour. Buckwheat’s nutritional value is head and shoulders above that of many other grains, with high levels of protein and fibre.
Buckwheat flour can be used for many of the same purposes as wheat flour, such as baking and pancakes (blinis and galettes in particular – we like ours with scrambled eggs and smoked salmon), although it's often used in combination with other flours as its intense nutty, earthy flavour is best when it's slightly on the subtle side. In baking, buckwheat flour pairs excellently with flavours such as chocolate, coffee, caramel, nuts and spices, and it's a great taste counterpoint to berries, making it enormously versatile.
In savoury dishes, it works well with earthy flavours such as mushrooms, parsnip and squash, and it's an excellent as a coating to rub onto a wide range of foods before frying.
In Japanese cuisine, buckwheat is used to make soba, a delicious, nutritious noodle that's a signature part of the country's culinary tradition, and which finds an echo in Italy in the form of pizzoccheri, a tagliatelle-like pasta that's made mostly from buckwheat flour. Nether are difficult to make, but both will impress your dinner or lunch guests, so get your apron on!
